For some reason, spinach artichoke dip is a challenge to find gluten free in a restaurant. Either the dip has flour in it, or the chips are fried in a shared fryer. So, luckily, my recipe for gluten free spinach artichoke dip is 100% safe, simple (6 ingredients!), and so good that you wouldn’t dream of ordering it in a restaurant.
1 package chopped frozen spinach (thawed)
8 oz cream cheese
1 cup sour cream
½ cup parmesan cheese (any cheese would work)
1 jar artichoke hearts (rinsed and chopped)
½ cup Monterey jack (any cheese that melts well would work… like cheddar)
Get a large saucepan on the stove and sautee the chopped spinach to ensure that all of the excess water gets out.
Once the excess water evaporates, add the block of cream cheese (8 oz) to the sauce pan. Stir until combined.
Add the cup of sour cream to the saucepan, and stir until melted and combined.
Add the parmesan cheese (or whatever you have around), and stir until the cheese melts.
Finally, add the artichokes to the mixture and stir.
Pour your mixture into a dish that is oven safe then top the dip with the Monterey jack cheese or cheddar.
Broil until the cheese is melted and bubbly.
Serving ideas: serve this dip hot with tortilla chips or toasted gluten free bread
This is a great dip to make before hand. Just put the dip in the oven on broil when you are ready to serve!
